I have this friend – YES, she knows I’m a Dork – who takes it upon herself to remind my
children, to remind me, not to forget…you know…things I just don’t remember, anymore. Like, the days when they should NOT be going to school…like, Thursday…and Friday…Monday, too…I think. Well, because there isn’t
any school, and they’d be the ONLY ones there and other
stuff, like that.
So, where am I going with this…um…give me a moment…oh, yeah…I’m joining another friend Christina of A Mommy Story in getting healthy before my trip to BlogHerConSanFran, in July.
Or, as Christina so valiantly refers to it as, "Hot By BlogHer."
Alas, my "hawt" days are numbered — the kids saw to that years ago and never-you-mind-just-how-old-I-am, anyways — but, that doesn’t mean I can’t feel good about the way I look. Right?
Riiiiiight.
So, I’ve committed myself to walking the Doofus-dog (twice a day) and actually using the gift certificates, that my favorite sister-in-law gave me at Christmas, to join the pilates class at her gym
Every Tuesday at 7:00 p.m. – pray for me – and please, do NOT make me the first one to HAVE to, you know, pass gas!
Oh, and before I forget, I’ve been tapping into my cooking roots and coming up with some pretty neat and simple recipes that even the kids like. So, I thought perhaps I should start writing them down and…HEY!…why not share them with you? Every Tuesday. So, I don’t forget.
Please excuse the Rachel Ray-ish type measuring of ingredients.
Today’s recipe – Lemon Parsnipity Chicken:
6 boneless/skinless chicken thighs
1 teaspoon each: pepper, salt, and paprika
1 Tablespoon flour
2-3 Tablespoons Canola Oil
1 large lemon (squeezed)
(*) 1/4 cup of chopped shallots
1/2 cup low fat chicken stock
(**)1/2 cup of a dry white wine
1 Tablespoon corn starch mixed with 1 Tablespoon water
1 handful of Italian flat leaf parsley
(***) 1 lb. box of pasta
Cut chicken thighs into cubed-sized pieces (like stew) and toss together into a bowl with flour, pepper, salt and paprika. Set aside.
Heat the 2 Tablespoons canola oil in a large skillet on med-high heat and lightly-brown chicken pieces in two, or three handfuls at a time. Placing each browned batch into a bowl, before adding more chicken to the oil. You many need to add more oil. Just, don’t brown all the chicken at once.
Once all the chicken is lightly-browned and removed from the skillet, reduce heat to low and add shallots to the hot pan, stirring constantly for about 2 minutes, then stir in lemon juice.
Add the lightly-browned chicken back in and then add wine. Swish it around a little and then add chicken stock.
Cover and simmer on low for 10 minutes.
You can add in parsley now, or – if your kids don’t like parsley (like mine) – just wait until you are ready to serve and toss directly on top of dish.
Mix corn starch with water and stir into skillet to thicken the sauce.
Serve over cooked pasta and salt and pepper, to taste.
Just So You Knows:
(*)You can substitute 1 chopped onion and 1 tablespoon chopped garlic and continue with recipe as usual.
(**) You can omit wine; just increase chicken stock to 1 cup and continue with recipe as usual.
(***)There are a lot of healthy choices available, but I buy Ronzoni Smart Taste Pasta and the kids and I really do love its texture and taste.

That looks yummy! I’m doing pilates too whenever I can pull my butt up off the chair. That amounts to once a week if I’m really trying!

Elizabeth: You know, if the kids say it tastes better, who am I to argue?
Believer: Oh my heavenly buns, but pilates hurts! But, I really do want to feel better by BlogHer. In fact, that was my mantra during last nights torture…I mean…exercises. Better by BlogHer…better by BlogHer…infinity!
Jamie: We’re bringing back ellipses…Baby!
